    If you’ve been around the blog for long enough, you may notice I use chia seeds from time to time to create very lightly sweetened puddings. This time, I paired them with fresh fruit to make something that’s a jam-like consistency with no added sugar. Feel free to switch up the berries with other fruit!

    Berry Mango Chia Jam Recipe

    Serves 2 cups     adjust servings

    Ingredients

    • 1/2 cup (100 grams) diced mango
    • 3/4 cup (150 grams) blueberries
    • 1 cup (225 g) chopped strawberries
    • 4 Tablespoons chia seeds

    Instructions

    1. Add the fruit to a small saucepan. Cook over medium-low heat until it has softened.
    2. Slowly stir in the chia seeds until they’re evenly incorporated. The “jam” will continue to thicken as the seeds absorb moisture.
    3. Store in a tightly covered container in the refrigerator.

    1. I LOVE jam and will definitely try this….but what do you put it on?? Maybe I think too narrowly about muffins and jam or toast and jam or ice cream and jam…..none of which is really approved on paleo, LOL!

    2. I made this yesterday when I was batch cooking. Just delicious.
      As it goes, I was also roasting some pork, with salt and pepper crackling (to die for) and I didn’t have any clean apple sauce in to go with, so I used a little jam – was very nice indeed and set the flavour off very well. Of course I have pork left over, so I feel both may get used again this week……

    3. yay jam! And of course you should eat it with pork! In Scandinavian cooking we use berries and fruit liberally with meat – reindeer and lingonberry jam is a flavour bomb and something I have missed, but not much longer. I didn’t think to use chia as a thickener – duh! Will pin for future use, thanks!
